This wine is presented without stabilisers and with very light filtering, allowing for the presence of natural sediments which ensure its purity and integrity. This wine should therefore be decanted.
Appearance Medium morello cherry red with light terracotta tones.
Nose Very high intensity, marked cinnamon, clove and pepper spiciness; excellent reduction of tobacco and mahogany that add complexity to the aroma of vanilla, toasted wood and cherry.
Taste Powerful retronasal release that imitates the olfactory phase, particularly the spicy notes. Mild attack, spicy and fruity mid-palate, excellent acidity that gives it freshness and tannic structure of sweet tannins; it is big, corpulent and meaty. Long lingering vanilla, toast and pepper finish.
Pairing Ham and cured meats, stews, wild game, red meats, blue or sharp cheeses and foie.
